Fresh Mango Bread (TWD)

Help, my hard drive was attacked by computer gremlins! For the life of me, I can't seem to locate my mango bread photos. Sorry, this lone photo is all I have to share. I'm bummed! :(

Mango Bread is this week's Tuesdays With Dorie recipe. Aside from eating mangos fresh or sipping a mango-rita (man, I could use one of those right now), I've never baked with this fruit. I was very interested to see how this would turn out.

I followed this quick bread recipe as written, and my only addition was topping the loaf with a lime glaze that was made with 2 tbsp lime juice (using the zested lime) and 1 C. powdered sugar.

The texture of the loaf was nice and moist, and I enjoyed the chunks of diced fruit. Even after giving the loaf a couple of days to let the flavors mature, I was a little underwhelmed with the flavor of the bread, . I was anticipating great fruit flavor from the mango and lime, but it was much more subtle than I expected.

Such a bummer...I had high hopes for this recipe. Then again, it could just be me. The hubs took the loaf to work, and he shared that it was happliy gobbled up by his co-workers.

  3. The bread looks amazing! Maybe the spices or baking the mangoes muted their flavour a little because that's what I felt too.

  4. a little glaze--nice idea! at least your lone photo is a good one! you know, i didn't notice the lime flavor at all (in fact, i forgot it was in there when i ate it).

  5. OHHHH! You glazed it... I thought about it too, but energy was low... You have more stamina than I do!

    It is absolutely charming! Looks just like something coming out of a famous baking magazine!

  8. Uh oh, I hope you can find your photos! I love that you added a lime glaz. Since with just the zest the lime flavor was so subtle in this, the glaze would probably help that. Your bread looks great!

  14. I loved this bread, but I love mangos and they are plentiful where I live. I think some varieties may be more flavorful than others. The glaze - what a nice touch. I left out the raisins and let the mango sing. Also, I added chopped slivered almonds. A good resource book is, The Great Mango Book by Allen Susser. Good job!

  17. Some TWD-ers mentioned that the flavor of lime zest is not prominent in the bread, and so I think it's a brilliant idea to pair with lime glaze! Sorry that you didn't like the bread though.

  22. Your bread looks amazing! I'm sure the lime glazed helped bring out the lime flavor. I agree that the mango flavor was lacking but I loved the bread anyways because of the spices used. I'd like to try it again with more mango maybe and no raisins.

  23. Lime glaze is a great twist! This bread really hit the mark for me, but I think I was really happy about the nice spice flavors and didn't really have great expectations for what the mango would do.

  28. Agree on the mango flavor - was very mild. But the loaf was nice and spicy. Yours looks really good.

    My computer died, so all the pics I had for future posts have gone to computer heaven. Guess I will just have to bake/cook again. **SIGH**
