Caramel Crunch Bars (TWD)

This week's Tuesdays With Dorie recipe, Caramel Crunch Bars, was selected by Whitney of What's Left On The Table (please visit Whitney's blog for the recipe).

This cookie is essentially a shortbread with morsels of chocolate (I used bittersweet) distributed throughout and topped with more chocolate and toffee candy (I hand-chopped Skor toffee bars).

Instead of using a 9x13" pan (as instructed in the recipe), I used a square muffin pan to make individual cookies.

Dorie Greenspan notes that these cookies are great for ice cream sandwiches. With that in mind, I added a scoop of 7 bean vanilla ice cream (I will be sharing this over-the-top recipe later this week):
Then, I drizzled slightly warmed chocolate sauce on top:
This cookie is delicious on its own. Who knew that little ice cream and chocolate sauce would elevate this into a spectacular dessert --- YUM!

SEVEN BEAN vanilla ice cream?! WOW. It must be amazing. Can't wait for the recipe.

I agree--ice cream elevated these bars to the next level. I loved them without ice cream, but they were even better with it.

These look like they turned out great, but the vanilla ice cream recipe sounds awesome! I baked them in a 9x9 inch pan and they turned out pretty thick, but oh-so-good.

O.M.G. That last picture is to die for. The bars themselves were good, but with that ice cream AND the caramel sauce -- I am speechless.

Oh, square muffin tins, I don't even KNOW about those...I learn something new every single week. Your bars look really good and then way over the top with all the dressing up! Wow...Kudos to YOU! Very nice blog...I have never visited before, and it is lovely.

Oh my, your pictures have me drooling and cursing myself that I have given up sweets for lent! argh!!! The bars were just fantastic weren't they?? Darn, guess Ill just have to wait 38 more days to try them with ice cream. ;)

Oh my, look at those little vanilla specks in that last picture. The chunks of toffee. The chocolate sauce. You've taken Dorie's recipe to a whole new level. That last photo is drool-worthy.
